She's the passionate chef at the helm of the street food sensation which has opened its own space in the heart of Southampton's cultural quarter. 

Patti Doungsong is the 'Mama' behind family business Mama's Kitchen which continues its regular food truck outings, as well as serving up Thai and Chinese delights for food fans and customers of Grumpy Monkey in Guildhall Square.

She talks connection with her customers and chillies in our meet the chef column.

What first inspired you to become a chef?

"I love to cook and it is one of my biggest passions; I want people to enjoy my food and share a good moment, share my passion for food and give a great experience."

What was the first meal you cooked for someone else?

"I cooked for the first time Chicken Thai Curry for my son in law, before he married my daughter."

Tell us a bit about your career so far…?

"I first started working in the food truck here in the UK, moving all around Hampshire, but customers kept on asking where our restaurant was located - and that’s why we decided to take the next step and open our doors to our customers."

What is your proudest career moment to date?

"My proudest career moment will always be the connection I create with my customers, I remember all my customers, if I see one, I will remember them forever."

What is your signature dish?

"Deem sou homemade pork - it is our customers' favourite."

Where is your favourite place to eat in Hampshire?

"Mama’s Kitchen for sure!"

What is your favourite meal to cook at home?

"Som tum" (a classic Thai papaya salad).

"Ice cream!"

"Chillies."
