THIS MONTH sees a new name displayed in Milford on Sea as Il Mulino restaurant is re-opened as One High St.

"We have been running the restaurant for the past nine months and January has seen some refurbishing take place, so we thought it would be a good idea to re-open with the new signage in place", says Amy Frearson, who is co-proprietor with Sarah Laskey.

"The people of Milford on Sea and the surrounding area have been very good to us and we have quite a schedule planned for the coming year."

Amy is a graduate of the Specialist Chef Course which she studied at The Bournemouth and Poole College of Further Education, while her diploma in professional catering was presented by TV Chef Brian Turner.

She has already held the post of chef de partie at the Savoy Hotel in London, Lake Placid Lodge in New York and Occam in Auckland, New Zealand.

"That was all great experience and has stood me in good stead for the role I now play at One High St." Amy added.

Head chef Des Burke also has an impressive CV, including senior chef de partie at Michelin star-rated hotels in London.

"We work hard to provide an interesting and varied menu for our customers," says Des.

"Amy and I are both perfectionists who enjoy what we do. We want to make One High St an experience which diners will want to repeat again and again."

"Sarah runs the dining room side of the operation and her management background is well suited to the task. Service can make or break an evening out and the standards set are impressively high."

"I work on the basis of how I would like to be treated and our team all have the same work ethic," says Sarah.

"Eating out should be a pleasure and that is our aim for every customer."
