Enjoy light but tasty four cheese salad

Ingredients

A mixture of Lollo Rosso, Oak-leaf and Iceberg lettuce leaves

French bread

Any four varieties of local goats cheese

Butter

Salad dressing made with:

3 tbsp truffle flavoured oil

1 tbsp white wine vinegar

Salt, pepper and pinch of sugar.

A few black olives

Method

1Wash, drain and tear the lettuce leaves, and set aside in a bowl.

2Thinly slice the French bread and toast one side only. Lightly butter the untoasted sides and place slices of the various goats cheese on them.

3Grill under a hot grill until brown. In the meantime mix the lettuce leaves with the dressing, garnish with the olives and serve with the hot, grilled cheese toasts.
